Zucchini Bread


2 cups shredded zucchini
2 cups sugar
1 cup oil
2 tsp vanilla
1 egg
Mix ingredients, then add the following:

3 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1 tsp cinnamon




Bake in a 9 x 13 inch pan.  325 for 30 minutes.  1 hour if using bread pan.
