My sister made this for one of our desserts on Mother's Day! YUM!!!! The nice thing about this dessert, is that it can be made the night before.
1 package Pillsbury Sugar Cookie Dough
1 package Cream Cheese
1/2 Cup Powdered Sugar
1/2 tsp vanilla
Spread cookie dough onto desired pan: Pizza pan (round), stone or cookie sheet. If you slice the dough up into several small round sections, this makes it easier to smooth out. You can use a small pizza roller to flatten the dough or use you fingers. Note: you can also use a tad bit of flour to help spread the dough - so that it doesn't stick as you are spreading it out (however, do not use too much flour).
Bake cookie at 325 for 10-12 minutes - do not over bake. You just want it to be a little brown, but still soft.
Let cookie crust cool completely.
Mix sugar, vanilla and cream cheese together (you can add food coloring to give it some color if you would like)
Spread mixture on top of cookie.
Add desired fruit: We added mandarin oranges, kiwi, strawberries and pineapple.
Refrigerate.
DELICIOUS - this is a very refreshing dessert.
