Sweet Potato Hamburger Pie


1 medium onion, chopped
1 pound lean ground beef

Fresh ground pepper
1 1/2 tablespoons Worcestershire sauce
1/2 teaspoon chili powder
1 can green beans, drained
1 can tomato sauce - 10 oz. - No Salt Added
2 medium sized sweet potatoes
                                                       1/4 cup grated sharp cheese

Brown onion and beef; drain the fat. While meat is browning, peel and cut sweet potatoes into small pieces.  Place in water and boil until soft.  Drain and mash.

To the meat mixture add:  black pepper, Worcestershire sauce, chili powder, green beans and tomato sauce.  You can place in a 2 qt. casserole dish.  I divided the meat mixture into two small pie plates and two ramekins. 

Spoon sweet potato mash over beef mixture, top with cheese.


Bake in 350 degree oven for 25-30 minutes or until heated through.


Mine with no cheese.

Pulled DELICIOUS Chicken Sandwiches

Shannon made lunch today! He found this recipe  on Rachel Ray's Magazine website.  This chicken was delicious on toasted, Sara Lee's Whole Wheat Hamburger Buns.  I can not wait to have them again!!!! LOVE THEM!!!

Ingredients
  • 4 skinless, boneless chicken breast halves (about 2 pounds)
  • Salt and pepper
  • 1 onion, finely chopped
  • 4 cloves garlic, finely chopped
  • 1 1/3 cups barbecue sauce
  • 1/2 cup apple cider vinegar
  • Hot pepper sauce
  • 6 kaiser or French rolls, split
  • 6 ounces shredded Monterey Jack cheese (about 1-1/2 cups)
Directions
  1. Season the chicken with salt and pepper and place in a heavy pot with the onion, garlic and just enough water to cover (about 1-1/2 cups). Add the barbecue sauce, vinegar and a few drops hot sauce and bring to a boil. Reduce the heat and simmer until the chicken is cooked through, about 15 minutes. Remove the chicken from the sauce and shred with two forks.
  2. Boil the sauce, skimming occasionally, until reduced by half, about 15 minutes. Season with salt and pepper. Add the shredded chicken and heat through. Spoon the mixture onto the rolls and top with the cheese.

Cinnamon Roll Pancakes

Today I made Shannon breakfast.  I had found this recipe on Pinterest months ago.  Thought that I would finally try it, well of course I couldn't try it since I gave up sweets for a while.  They were fun to make.  I would love to make them for my nieces.

This recipe makes 6 pancakes using - 1/3 cup

  Ingredients:


CINNAMON FILLING:
4 tablespoons (1/2 stick) unsalted butter, just melted (not boiling)
1/4 cup + 2 tablespoons packed light brown sugar
1/2 tablespoon ground cinnamon

CREAM CHEESE GLAZE:
4 tablespoons (1/2 stick) unsalted butter
2-ounces cream cheese, at room temperature
3/4 cup powdered sugar
1/2 teaspoon vanilla extract

PANCAKES:
1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk (I used coconut milk)
1 large egg, lightly beaten
1 tablespoon canola or vegetable oil
